Typical Tuscan pasta, processed using artisan methods, bronze-drawn and made from Italian durum wheat semolina, dried at a low temperature.
This pasta is perfect for pre-cooking as it does not stick together and never overcooks, even if combined with a sauce and kept warm for several hours.
The 2.5-mm long string of dried pasta is quite short, making it ideal for catering purposes.
For the best result, we suggest cooking this pasta in plenty of boiling water and not stirring it for the first 12 minutes to prevent it from breaking up. The total cooking time is 22 minutes.



Long, thin strings of pasta rolled into spirals, obtained using a special machine. This pasta, like hand-made pasta, is very porous and can retain the sauces to enhance the flavour of the first courses. Excellent also when pre-cooked; it does not overcook or stick together even when left in the pan. Ideal with pesto or with anchovies and breadcrumbs.

They distinguish themselves for the presence of the Wheat Germ, the heart of the grain of wheat, rich in flavour and nourishing active ingredients. The germ is normally removed when the grain is milled in order to improve flour conservation. The Pastificio Morelli has used artisanal techniques to restore it to the flour, because it processes it immediately, when still fresh. After years of using Wheat germ, the Antico Pastificio Morelli has managed to create pasta with its extraordinary, unmistakable flavour. An intense wheat aroma is released during cooking, and the water turns slightly green, because of the presence of the wheat germ.
