The Accademia Olearia fruity extra virgin olive oil is obtained by using olives picked at a time of medium maturity. It is a high quality oil that was born following the most traditional production techniques. Once in the oil mill, the olive is in fact processed by a cold process. Thus an oil of good structure is born, with a bright green color with golden reflections, a clear olive scent and a soft aftertaste on the palate. HOW TO TASTE IT BETTER Excellent both on elaborate dishes and in the realization of simpler recipes. Its particular taste, soft but present, recommends its use raw as a dressing for salads and cooked vegetables, or even for the preparation of bruschetta and pinzimoni. Ideal on fish dishes. Store in a cool place away from light.



The extra virgin olive oil from Organic Farming is obtained by following the rigorous dictates of the Reg. Ce. 834/07 and of the Reg. Ce 889/08 which regulates the cultivation rules and certified by the ICEA control body. It is harvested at a time of medium veraison from olives mainly of Bosan variety; it is a structured oil with a clear olive scent and a green and pungent fruity flavor with bitter and spicy notes, with hints of artichoke and thistle. Ideal daily companion for every dish of our healthy and genuine cuisine. Keep in a cold and dry place.



The extra virgin olive oil Bio D.o.p. Sardinia represents the union between organic cultivation and the guarantees of quality and typicality of the D.o.p. Sardinia. The BioD.o.p. it is obtained from olives mainly of Bosnian cultivar, harvested at the moment of beginning of ripening. The result is an extra virgin green fruity with an intense flavor and strong hints of thistle and artichoke. The taste is recognized for the balanced intense tones of bitter and spicy. How to best enjoy it: An intense product that goes perfectly with the most decisive dishes of our cuisine, ideal on soups or raw on a bruschetta.



The Producer's Reserve represents one of the peaks of excellence of the Olearia Academy: it is an extra virgin olive oil, the result of a selection of olives that are still completely green, combined with a cold transformation process that takes place simultaneously with the harvest. The result is a product with a strong structure with a clean olive scent, fruity green, fresh and pungent flavor, with strong hints of artichoke and thistle, as well as marked notes of bitter and spicy pleasing to the palate. How to best enjoy it: Its particular intensity makes it an element of prominence for the dishes of our kitchen.
