Leporati Prosciutti Langhirano SpA is a family-owned company producing Parma Ham PDO (Prosciutto di Parma DOP) and other high quality cold cuts since 1969.
Leporati is member of the Consortium (Consorzio Prosciutto di Parma) and for such reason it has stringent quality controls and safety standards so to ensure the selection of the best products made with a traditional method in order to satisfy the most refined and demanding palates worldwide.
The current production capacity is 180,000 pieces per year. However, in order to ensure the best quality products and accurately follow all production stages, Leporati stops the production at 75,000 pieces per year.
The plant is constantly renovated and up to date with Italian, European and international standards and today the factory covers an area of 8,000 sq.m.
During the years Leporati has obtained several certifications and it was among the first Italian companies getting the certificate to export Parma Ham PDO in the United States in the early '80s. Currently, the company has ISO 9001:2008; ISO 14001:2004 and EMAS Certification; BRC and IFS Certification and many more.
Leporati's products have unique characteristics and flavors acquired during the production and seasoning. It is worth mentioning as follows:
Production area - Leporati's hams are produced in a very precisely delimited area in the Province of Parma.
Meat selection: the haunches selected come exclusively from pigs born, bred and slaughtered in Italy.
Salting phase: the first and second salting phases are very accurate and these two phases last for approximately 4 weeks. Only Italian marine salt is used.
Maturation phase: it is very slow and lengthy in our maturation rooms and it is here where the unmistakable sweet aroma of the Leporati dry-cured hams is developed.
All Leporati's hams are made with only Italian pork legs and sea salt. Allergens, additives and OGM are not used in the production process of Leporati Prosciutti Langhirano SpA.
