Gelli Salumi

Gelli Salumi is a company based in Certaldo, in the heart of Florentine Valdelsa, specialized in the production of typical Tuscan cured meats, such as Finocchiona PGI (fennel salami with Protected Geographical Indication), pork and wild boar sausages and salamis, Tuscan ham PDO (Protected Designation of Origin) and many other products strongly tied to the local farming tradition of this area.
In addition to pork, it also transforms wild boar and turkey meat, obtaining innovative products.
The Company employs about 20 people and has always maintained a family-based management since 1971, the year of its foundation.
In 2021 Gelli Salumi celebrated its 50 years of business.

The name of this salami comes from ≪finocchio≫ (fennel), used to flavour pork meat. It is made from premium quality pork (Italian meat) with the addition of wild fennel seeds. Since 13 May 2015 it has been entered in the register of protected geographical indications (PGI) by the EU. Thanks to this registration, production regulations ensure a high-quality product to consumers. Finocchiona
P.G.I. is prepared using Tuscan artisan curing processes, according to
traditional recipe passed down for generations. The wild fennel combines perfectly with the lean pork during the curing process. Finocchiona P.G.I. has a soft texture, light red colour and it feels very soft in your mouth.



It comes from pigs raised in the following regions according to D.O.P. disciplinary code (Protected Designation of Origin producers' association rules): Lombardia, Emilia Romagna, Marche, Umbria, Lazio and Toscana. Roundish shape arched on top for the presence of a “fleshy frame” that does not protrude for more than 8 cm over the head of the femur. Weight normally around 8/9 kg but never less than 7.5 kg. Delicate and not too salty taste.



The salami with typical Certaldo onion was planned thinking back over the past.
This special kind of onion , with its peculiar lightly sweet taste, is minced together with Italian pork meat to obtain a unique salami.
