Il salame felino è ottenuto dalla macinazione della carne a grana media con l’aggiunta di solo sale marino e pepe nero in grani.
Per produrre il nostro salame non aggiungiamo grasso.
Una volta miscelato l’impasto con le spezie, il Salame viene insaccato in budello di suino rigorosamente naturale (il cosiddetto “gentile” o “culare”), e legato a mano con spago in fibra naturale e stagionato lentamente in ambienti tradizionali.
