Congusto Institute is a leading culinary school based in Milan, Italy, active since 2003.

The Italian Culinary Program is a professional training course based in Milan, Italy, designed for international students who want to develop solid skills in Italian cuisine.
The program combines practical training and theoretical foundations. Students work in fully equipped professional kitchens, in small groups, guided by experienced chefs and industry professionals.
The curriculum focuses on:
Fundamentals of Italian cuisine
Regional traditions and contemporary techniques
Pasta, risotto, meat and fish preparation
Sauces, stocks and professional kitchen organization
Food safety and basic food science
Cost control and kitchen management basics

The Italian Pastry & Bakery Program (IPB) is a professional training course based in Milan, Italy, designed for international students who want to build solid technical skills in Italian pastry and artisan baking.
The program is practice-driven. Students work daily in fully equipped pastry and bakery laboratories, in small groups, guided by experienced pastry chefs and industry professionals.
The curriculum covers:
Traditional Italian pastry (cannoli, crostata, tiramisù, choux pastry)
Italian breakfast products and viennoiserie
Artisan bread and sourdough techniques
Panettone and naturally leavened products
Chocolate basics and pralines
Modern desserts and plated pastry
Gelato and semifreddo
Baking science fundamentals
Laboratory organization and cost control basics
The focus is on technique, precision and consistency. Students learn production methods used in professional pastry shops and bakeries, developing timing, organization and teamwork.
Courses are delivered in English.
