Italian quality with sublime taste Botalla was created in 1947 and is located in Biella, in the quiet alpine hills of Piemonte, a special land which provides the abundant grass favoring the special breed of cows, called Pezzata Rossa and Bruna Alpina. The superb taste of our cheese comes not only from the selected and local milk but also from the competence,commitment and passion of our experienced artisans.A hundred thousand forms rest on pinewood plank in our cellar where tradition and innovation create unique conditions for the aging process that make our cheese so special.The best Italian cheese for the finest palates.

Sbirro is the first and only cheese that uses Menabrea beer in its production It represents one of
the most appreciated results in the area of innovative product research The main goal of our study was to
create a cheese with an original taste and scent where the beer enhances Sbirro without suffocating it, but
actually exalting the quality and excellence of both products Sbirro owes its success not only to the selected
and local raw materials used during its complex process of production but also to the competence,
commitment and passion of the people who work in these companies.
It is the fruit of collaboration between two companies of Piemonte (Botalla Formaggi and Birra Menabrea)
who share the same passion for excellence and enhancing the culinary flavour of the area.



Tradition means many things but not old. It is the heritage of flavour, a cellar of fragrance, a marvel of nature. Produced exclusively with Piedmontese cow’s milk coming from our selected
breeding. The expert hands of our cheesemakers transform the milk into cheese, shape it and take care of it
through the entire processing phase. Our Toma Piemontese D.O.P is crafted according to the rigorous canons
of the Piedmontese dairy art, bringing to the table the flavour of distant times which have never been
forgotten. The Botalla Piedmontese DOP Toma is a tomme with a sweet full taste, the perfect ambassador of
the Piedmontese dairy tradition. A taste of quality and genuine flavour



Our butter allows the consumer to rediscover the tastes and flavors of tradition.
Produced daily with high quality cream, hand processed and packaged, stick by stick like once upon a time.
A unique product with a characteristic light yellowish hue, rich in flavour and and scents of our pastures, which are discovered when opening the package.
Oue butter, thanks to the high quality raw materials, is very versatile and can be used in multiple ways in the kitchen or spread on bread with a touch of sugar for a traditional healthy snack.



Blu di Grotta is a cheese produced with 100 % goat’s milk from selected farms which, thanks to the experience of our master cheesemakers, is embellished with the characteristic blue veins (noble molds that are added at the end of production). The slow aging on pinewood boards of the Botalla cellars gives this cheese a unique scent and a strong flavour. An exclusive recipe that is completely based on the balance of taste and flavor.



It is for this reason that we thought of a Gourmet Line, ideal for the world of restaurateurs. Here there is an exclusive selection of Botalla flavours, but in a smaller format for a really complete cheese trolley and for the preparation of unique original dishes.
If the strictly Piedmontese milk, is enriched with ginger, turmeric, pepper, intense but gentle spices or with the colour and aroma of flowers, we have the discovery of new cheeses with a unique and balanced taste, in pure Botalla style.
