Located in Salsomaggiore Terme, in the heart of Italy's "Food Valley," Pasticceria Tosi has been a landmark of artisanal pastry excellence since 1962. Guardian of a precious ancient sourdough starter, the company owes much of its fame to its leavened products—most notably the celebrated Focaccia. This sourdough-based leavened specialty, characterized by its liqueur-infused soul, is recognized as a national gastronomic excellence and has earned numerous mentions in the Gambero Rosso guides and prestigious industry magazines.
Today, the original recipe of the renowned Focaccia is available in various flavors and sizes, all featuring a lightness and aromatic bouquet that make them perfect for year-round enjoyment as well as traditional holidays.
Under the leadership of brothers Federico and Lorenzo Frascari, who acquired the company in August 2025, Pasticceria Tosi is undergoing a phase of intense international momentum. Federico, who trained directly under Maestro Tosi, ensures the artisanal continuity necessary to project this historical heritage onto global markets.
The current strategic vision combines the rigor of tradition with process innovation. The goal is to bring the authenticity of "Made in Parma" beyond national borders, positioning Tosi leavened products as a symbol of fine Italian pastry in the world’s leading international showcases.
The synergy between Federico Frascari (Production & Innovation), Lorenzo Frascari (Management & Sustainable Development), and Michela Tosi (Brand Ambassador & Historical Memory) unites technical heritage with a global vision for the brand's internationalization.
To support this business evolution, Pasticceria Tosi has launched a structural enhancement plan aimed at increasing production capacity without compromising quality. The project’s solidity stems from the experience of the new owners, already established entrepreneurs in high-end artisanal pastry.
They have expanded the operational spaces by integrating a modern production laboratory equipped with new machinery and powered by proprietary solar panels. The original since 1965. Our naturally leavened dough features candied apricot, orange, and pineapple, crafted with artisanal dedication. The fruit pulp meets the deep aromatic notes of Luxardo Maraschino, while the almond glaze adds a toasted touch to a timeless balance of flavors.
La Focaccia - Figs & Walnuts
A play of textures between the succulence of figs, candied apples, and the crunchiness of walnuts. The naturally leavened dough is finished with an infusion of Luxardo Bourbon Vanilla distillate, while the almond glaze provides its signature toasted final note.
