Yes, we Illica are lucky to live in an extraordinary valley, enchanting and discreet that we have a duty to preserve and enhance.
We breathe pure air, we walk on a clair and bright land born from ancient tropical seas, we listen to the sweet lamento of the fossil shells breaking beneath our feet, we climb on steep scope to raise our vineyards and we enjoy healthy evening breeze blowing from the sea and the mountains. High
above, where our most ancient grapevines dwell, a shining landscape is waiting for us, in which the eyes run among woods, badlands, vineyards, castles, ancient villages, horses and some isolate house.
Cold Winter and not too warm Summer, clear sky and fresh breeze, strong temperature ranges between daytime and nighttime; all this is a benediction creating an unique microclimate able to respect the nature balance. For a long time, in our valley, we do not have real reasons to use chemical products, and for we Illica the organic farming is a normal family tradition, not a trendy fashion.
The organic history of my wines began with my grandfather, mythical keeper of the art of cured meats, it continued with my dad, faithful defender of the security and enraptured by love for grapes and it has arrived to me, conquered by passion for wines me too, especially when they can be authentic expressions of a territory free from contaminations and pollution.
The green certification of my grapes is born twenty years ago when the word ‘organic’ was new but, sincerely, in Illica family organic is the normal rule, history, tradition.
It is just all we have always done!
Ethics, respect for environment, culture, trend, commercial needs are good reasons to make the effort of producing organic wines but not for Us: Val d’Ongina, our valley, does not need. Simply!

Tasting Notes
This wine has a pale yellow colour with slightly orange reflections. Fine persistent pérlage; very ample bouquet: citrus fruits, pink grapefruit, wild strawberry,white flowers, lime, acacia honey and green oregano. On the palate this wine is crisp,fruity and fresh with notes of citrus-flavoured fruit from wild forests.
Food pairings: excellent with appetizer, raw or steamed seafood, mozzarella di bufala and burrata, pasta or risotto with delicate vegetable sauce. Traditional Piacenza dishes like “tortelli di magro” with butter and
sage, pumpkin “tortelli”, “panzerotti”.
Serving at: 8-10o C

Tasting Notes
Appearance: brilliant straw yellow color
Nose: open with fine fruit flavor and aromatic herbs, with strong mineral notes.
Taste: fresh, sapid. Persistent finish with hints of pear and sage.
Food pairings: Excellent with appetizers. The wine can be paired with starters of fresh cheese (goat’s cheese, burrata) and raw ham; with pasta or risotto with delicate vegetable or fish sauces; dishes of fish like salt-cru- sted sea bass.
Simple but really elegant. Serving at: 10o C

Gutturnio Superiore (still) 2015 organic wine
Grapes
Barbera 65%, Bonarda 35%. Barbera (historical grape of the territory) has a medium bunch, pyramidal form, quite compact, winged (150-200 gr); the berry is medium sized, elliptic, with thin and consistent skin of uniform dark-blue colour, covered by high bloom. Bonarda (historical grape of the territory too) has a small bunch, conical shape, sometimes winged, loose and irregular (150-250 gr).

Tasting Notes
Colour: Ruby red color, with purple hues.
Nose: Nose with intense aromas of red fruit, especially black cherry and plum, followed by notes of almond, rhubarb, licorices.
Taste: Medium bodied with good acidity, velvety tannins, good persistence.
Food pairings: Perfect pairings with fresh filled pasta, roasted or grilled meats or medium-aged cheeses.
Serving at: 16 -18o C
