Founded in 1793 as an apothecary shop, Cedral Tassoni is an Italian company based in Salò, on the western shore of Lake Garda, where the offices and production plant are still located today. In 2018, Tassoni celebrated its 225th Anniversary, an important milepost which few companies can match. Over the course of its 225 years of history, the company, which has been run by the same family for four generations, has evolved and become a well-known, evocative brand, able to find a place for itself in the heart of Italians and to weather faddish trends.
Today, the company is a world-class excellence, recognized as one of the few producers which constantly and carefully controls its production chain, thereby guaranteeing the quality of the product’s entire life cycle. The peculiarities of Tassoni’s history are fundamental since they have contributed to the realization of successful products distributed all over the world: the tradition of distilling citron to produce hydroalcoholic infusions, respect for the raw materials, and a controlled production chain which produces the aromas it uses. A real warranty of quality!
Without a doubt, the feather in the cap of the soda line is CEDRATA TASSONI SODA, launched in 1956; it is produced using only natural aromas extracted from the peels of citron and citrus fruits. Supplied directly by the cultivator, the citron fruit used for the extraction of the aroma is an Italian variety called “Diamante” (Diamond), from the region of Calabria. The processing of the fruit, as per secular tradition, starts in the plant in the month of November by removing the most superficial layer of the peel, which is then infused in a hydro-alcoholic solution, to extract the essential oils. Respecting the old-time recipe books, once the infusion period is over, the hydro-alcoholic aroma obtained through this process is distilled with a traditional discontinuous steaming method: the temperature is monitored to allow the elimination of what in Italian is known as the “head” and “tail” of the solution, hence maintaining only the “heart” of the distillation at its purest, using a copper still from 1936. Whatever remains from the fruit, the pulp, is sent back to Calabria, where it is used for the production of candied fruit, avoiding any waste; giving a full circularity to the relationship of trust with the Calabrian producers and enhancing the local fruits.
At the dawn of the new millennium, Cedral Tassoni implemented a strong growth strategy characterized by four important keywords: Italianness, quality, tradition and dynamism, which perfectly sum up the latest additions to the product range, such as the Premium TONIC WATERS (Tonica Superfine with the natural aroma of citron and Tonica Superfine with Garda Lemons), SODA WATER and the”FIORI E FRUTTI” LINE (“Flowers and Fruits” line) with the idea of pouring in a glass the scents and the aromas of some flowers and fruits that Tassoni offers in its unique and natural drinks, such as Fior di Sambuco (soft drink with elderberry flower extract), Mirto in Fiore (myrtle-flavoured soft drink) and Pescamara (peach-flavoured soft drink with natural flavouring of almonds).
New drinks that offer consumers the natural fragrances and aromas of flowers and fruits, and which meet the market’s continuous demand for new trends and superior mixability. All the Tassoni soft drinks can be used to create new cocktails with a contemporary flavor, satisfying the taste of a growing range of consumers.

CEDRATA TASSONI: A STYLE ICON
Cedrata Tassoni was first launched in 1956, and soon became an authentic icon. The beverage comes in a 180 ml bottle of clear dimpled glass which enhances its sparkle and colour, recalling the peel of this particular citrus fruit and its freshness. No label: initially the name of Tassoni Soda was stamped directly onto the bottle. Down through the years, the bottle became even simpler: the brand and ingredients are only indicated on the unmistakable green and yellow bottle top. On the new bottle of 2011, the wording reappeared on the glass as a “retro” tribute to the tradition and history of Cedrata Tassoni.
Cedrata Tassoni Soda was presented in 1956 as an “evolution” of the traditional Sciroppo di Cedro Tassoni (citron syrup): a fresh and thirst-quenching beverage. Its yellow colour, the unusual bottle design recalling citron peel and the sweet and sour taste of citron are the salient characteristics which make this product so unique. The introduction of Tonica Superfine Tassoni offers us a premium tonic water with the natural aroma of citron. Pure and crystal-clear, Tassoni tonic water has a citrusy flavour with notes of aromatic herbs: a soft drink with an all-natural taste. Instead of quinine, which confers a typically bitter aftertaste, Tassoni has chosen to use the natural aroma of quassia, whose wood contains quassin, a well-known substance used as a bitter tasting additive. The basic ingredient is demineralized water, which serves to enhance the aromas, with an addition of carbon dioxide and citric acid, together with mixed citrus fruits, for a beverage that is truly one of a kind.

The introduction of Tonica Superfine Tassoni con Limoni del Garda not only regales a premium tonic water aromatized with Garda Lemons, but also provides an extraordinary example of how an agricultural heritage, such as that of the Lake Garda area, may be recovered and valorised.
Ideal for mixing cocktails for the joy of the most discerning palates, Tonica Superfine Tassoni has a list of ingredients that is short and sweet, without any added artificial aromas or preservatives. It is made up of demineralized water, carbon dioxide, citric acid, sugar, natural extract of Yellow Chincona and natural aromas, comprising that of natural lemon.
The main ingredient, which makes it so unique, is extracted naturally from the bark of the Yellow Chincona of Madagascar, and confers a note that is bitter, intense and clean-tasting, along with slight nuances of straw yellow. A final addition is that of an alcoholate, which is obtained from the peel of lemons grown in monumental greenhouses on the northern shores of Lake Garda since the early XV century.
