Premiata Forneria del Corso is an Abruzzo based company located in central Italy, whose mission is to follow the oldest traditions of our region by producing delicious typical pastries, biscuits and bread by carefully selecting only the finest ingredients, and taking great care to respect the traditional baking practices.
The key for our long term success actually is the long experience and the attention we have in choosing the best raw materials: quality comes first in everything we bake! That’s the reason why we do our best to maintain high standards since 1988, constantly improving the process but also increasing the production.
The company was founded in 1988 by Nicolino Salce, who inherited from his uncle an old bakery situated in the historic center of Tocco da Casauria, a small medieval village dating back to the year 872. Most ancient traditional recipes have been passed down from his grandmother and aunts to Nicolino himself, so he keeps them as a treasure, since those ancient recipes are still followed to the letter to produce biscuits in our artisan laboratory.
Thanks to the passion for our work and the constant commitment, we fulfil the expectations of the most demanding customers, and we have had the possibility to grow in our business, so as to be present in the best shops and Mass Retail Channels in central Italy .
Come and discover our Ferratelle: Rolled up, stuffed with extra jam of Montepulciano d 'Abruzzo grapes (from Montepulciano grapes variety, the local grape species used to make one of the most appreciated DOC wine in the world) or hazelnut cream; the crunchy Fan-Shaped and if you prefer, the soft Heart-Shaped Ferratelle, simply romantic and full-flavoured.
Cooked inside the traditional “Ferro”(in Abruzzo since 1700, engraved with noble families’ coat of arms or given to the future brides with their initials) which is the slightly hollowed "iron" with a double plate, these wafers are imprinted with the characteristic relief embroidery shape, and what comes out is really one of a kind.
Our selection of products also includes Savory Ferratelle Aperitivo; Cantucci chocolate biscuits; Several almond specialties such as Cantucci biscuits made with 43% of pure almonds, soft Amaretti, made with selected almonds and covered with a thin layer of sugar, (also revisited in two tasty varieties, lemon cream and coffee aroma) Riccetti almond biscuits and last but not least, Torroncini biscuits, covered with a crunchy meringue on the top.
Our vast range of products ends with what we call breakfast biscuits: Trebbiano d’Abruzzo Donuts, Grandma's Cookies, Ritagliati, Tiramisu Biscuits which are excellent for making the classic Italian dessert, and Fiammiferi choco cream Biscuits.

In 2015 we received an important recognition for the best product in the BREAD & PASTRY sector during the 10th Edition of "LA CASA DEL GUSTO" by Conad Adriatico, an event that showcases the exclusive Italian regional specialties within CONAD GROUP (first Mass Retail Channel group in Italy).

ANUGA FAIR 2021

Next October 2021 we will experience the leading trade fair event for food & beverage “ANUGA” which will takes place from Saturday 9th to Wednesday 13th October in Cologne. You can find us in the stand within the Italian collective of ICE Agency.

Crispy Ferratelle
The crispy Fan-Shaped Ferratelle are perfect to crunch on during a break, and especially delicious for filling with extra jam or whatever you prefer. Since you can eat them as a “sandwich”, Ferratelle are also known as “Coperchiole” from abruzzese local dialect: the second Ferratella overlapped with the first works as a “coperchio”, which means lid, precisely.
Used as a wafer, you can also enjoy it to accompany ice cream or yogurt.

Soft Heart-Shaped Ferratelle
The soft Heart-Shaped Ferratelle are probably the one most romantic and infinitely sweet from Abruzzese pastry-making tradition: perfect for breakfast, during your break, or at any time of the day.
The characteristic embroidery in relief is given by the traditional chiseled iron (“Lu ferr” in local dialect) which stamps the pattern onto both sides of the golden cookie.
You can also taste soft ferratelle with extra jam or any cream you prefer.

FERRATELLE WITH MONTEPULCIANO D'ABRUZZO GRAPE EXTRA JAM
Rolled up and stuffed with Montepulciano d'Abruzzo grape extra jam, they are one-of-a-kind specialty made with best raw materials and following traditional local recipe.
The jam used for filling these rolled Ferratelle is also called "Scrucchiata" in Abruzzese dialect because it crunches slightly under the teeth, and It is produced exclusively with Uva Montepulciano d’Abruzzo, an ancient grape variety present in our region and from which it is made the really appreciated and awarded wine named Montepulciano d 'Abruzzo DOC.

CANTUCCI DI ZIA NATUCCIA
The recipe for these delicious Cantucci has been handed down from Nicolino’s aunt Natuccia, who was a very skilled home pastry chef.
Characterized by simple and genuine first quality ingredients, Cantucci biscuits can be considered as the typical home-made dessert prepared by housewives in the ancient country farms.
Tasty and crunchy, with 43% of whole almonds and cinnamon, each Cantuccio is still hand-cut.
