Oleificio Sant'Anna

Sant'Anna oil mill was born from an idea of a banker with the passion for
agriculture transmitted by his ancestors.
It all begins from the construction of the mill in a hamlet (Sant'Anna, in fact)
of the city of Marsala in 1997, when, driven by the need to personally follow
the transformation of the fruits of their olive cultivation, the members of the
Family begin to understand the potential of that intuition, starting to
meticulously take care of all the processes of extraction of extra virgin olive
oils, always one of the symbols of Sicilian gastronomic culture and the
Mediterranean diet.
For its production, the Oleificio Sant'Anna relies on two main farms, that of
Marsala and that of Mazara del Vallo, for a total of 40 hectares of olive groves
cultivated for three generations.
The olive harvest, mainly carried out in the month of October, takes place
exclusively through picking, a process that avoids any type of fruit
maltreatment thus avoiding potential organoleptic imbalances in the
finished product.
The oils offered are three: Intense, Delicate and Organic.
Each one unique, for the organoleptic properties and for the experience it
manages to convey to the consumer.
With the aim of extending its horizons, in 2019 the Frantoio creates the
"Maccubbo" brand, named from the Tower in the company logo, with which
it identifies two lines: balsamic vinegar and of typical food preserves flavors
of the Sicilian tradition.
The Sant'Anna oil mill has a history of family traditions that grows and grows
over time. Its mission is to transmit, from generation to generation, the
added value of the family component in the purest and most traditional art
of the production of autochthonous oils while respecting the Made in Italy
quality.

ORGANOLEPTIC SENSATIONS

Visual: Crystalline, dense, green with yellow reflections.

Olfactory: Medium Intense, fine, vegetable, tomato, cut grass, almond, artichoke

Taste: Medium intense, structured, almond, tomato.

Final thoughts: Balanced, fine, complex and fragrant.

Qualitatively the oil is medium-light fruity with vegetal hints, a pleasant bitter sensation is perceived in the mouth and finally a good spiciness comes out, in the finish the oil is complex and fragrant.

Taste: Quite intense, structured, almond, artichoke and chard.

Qualitatively the oil is medium fruity with an excellent vegetal and balsamic bouquet, in the mouth a good and balanced sensation of bitter and spicy is perceived, in the finish the oil is harmonious and fragrant.

Maccubbo - balsamic vinegar born from a
recipe born in the 60's.
A mixture of wine vinegar and white grape
sugar, grown in Marsala and Petrosino
countryside.
Aged in wooden barrels, it was made with
natural ingredients, Maccubbo
balsamic vinegar is brown in color, with a
pleasantly flavor.
A product with no alcohol, fat and gluten
free, is able to enhance your dishes without
covering their flavor.
Ideal for dressing salads, appetizers of any
kind, cooked&raw vegetables and especially
meat and fish dishes.

Maccubbo - Balsamic vinegar, with the
difference in dosage, according to precise
doses, of concentrated grape sugar.
It looks like a delicious cream and sour jelly
and has a pleasant and aromatic aroma.
It goes perfectly with aged cheeses and also
with white and red meats.
