The pursuit of excellence is a kind of art. We are launching on the market a niche product that only a few selected customers know, i.e. the Italian caviar from a sturgeon breeder located south of Milan, within the Natural Park of Tormo River. Our caviar comes only from sturgeons kept in tanks with resurgent water in one of the very few still unspoiled areas of Lombardy. A “short” supply chain from fish breeding to the tinned product – fry are farmed with OGM-free fodder in pools of pure and crystal-clear water together with green energy produced through solar panels, not to mention the dedication and care of the breeder: up to 10-12 years to get sturgeons ready for the best possible caviar. The cutting-edge workshop according to the requirements of the Italian law and the great expertise of the best Caviar Masters curing caviar by hand according to the old traditional method called Malossol (a Russian word meaning “low salt”), which guarantees the purest and best-quality caviar.
Our customers are importers/ distributors of fine food, 5-star Hotels, top restaurants, deli shops.
We produce all the documentation needed ( CITES) to export all around the world.

For those who love intense flavour, CANALETTO NEERO is a fresh caviar, with a soft, fine and classy taste and a final aromatic fresh nuance. From the Siberian Sturgeon (Acipenser Baerii) and processed with the traditional “Malossol” method. Egg size ranges from 2,5 to 3 mm and it has a grey basic colour, from pearl grey to gunmetal grey. Available all year around.



INDACO is the colour of depth, reflection, elegance… that of the White Sturgeon, a native species of the Pacific Ocean, from Alaska to Southern California. CANALETTO INDACO caviar is very refined, comes from the White sturgeon (Acipenser Trasmontanus) and it is processed with the traditional “Malossol” method. The taste is delicate, pleasant and particularly classy. Its large roe ranges from 2,8 to 3 mm and the colour is dark, from black to gunmetal grey. Usually available from December to June.



The pearl is the precious treasure of the oyster and Canaletto PERLA caviar is pure perfection, a cross-breed of the Russian sturgeon known as Oscietra (Acipenser Gueldensteadtii) and the Siberian one (Acipenser Baerii). Very fine, processed with the traditional “Malossol” method (meaning with low salt) with egg size up to 3,0 mm. The colour may vary from pearl grey to dark grey, may have golden shades. Usually available from October to March.



CANALETTO INTENSO is unmistakable. Its colour is generally amber with rich cognac and honey hues. This fresh caviar is prepared according to the traditional “Malossol” method in order to preserve the distinctly strong yet pleasantly balanced flavour. From the Russian Sturgeon known as Oscietra (Acipenser Gueldensteadtii) and with large eggs up to 3,0 mm, this exquisite caviar is appreciated by the most demanding caviar enthusiasts and connoisseurs. Available all year around.



The king among caviars, CANALETTO ASSOLUTO caviar is an Almas (“diamond”) caviar extremely rare, absolutely the most precious. The preferred delight of Tsars, Shahs and Emperors because of its very delicate taste enriched by nice fruity nuances and the unique medium size, golden eggs. Extracted from the very rare Starlet Albino Sturgeon (Ascipenser Ruthenus) whose colour reminds distinctly the colour of gold. Available only on demand.
