Once upon a time there was a breeder whose animals lived in a green habitat, drank clean water and ate good GMO-free cereals. From their meats, through expert procedures and with the patient art of seasoning, he obtained genuine sausages with a natural flavor.
Once upon a time there was a pastry chef from the valley, who kneaded his desserts with the finest ingredients: vanilla bean, non-vanilla, selected flour, raisins, candied fruit and mother yeast pampered like a son. It made them rise naturally following an ancient recipe and let a warm and enveloping scent emanate from its ovens, an authentic temptation for gourmands.

Discovering Bagolino's Gold, Bagoss cheese
Bagòss is a cheese born in Bagolino, a small town in the province of Brescia located in the center of the Vallesabbia mountains. This cheese probably dates back to the 16th century when Bagolino he was influenced by the culture of the Venetian Republic. Saffron was among the goods that the latter traded and the Bagòssi (the inhabitants of Bagolino) began to use it in the production of their own cheese. The presence of saffron in the pasta gave it the typical straw yellow color, similar to gold.

Bagoss cheese from Bagolino for Slow Food Made in Italy

Bagoss is a raw and semi-raw paste cheese, with internal ripening, with a heel of about eleven centimeters. A form weighs from 18 to 20 kg. The perfume is the characteristic persistent seasoned cheese, the spicy sensations of saffron are felt, combined with notes of pasture and haymaking that give it a typical intense, slightly spicy flavor, especially in the very seasoned Bagoss.
