Collefraioli Società Agricola, was founded in 2017 in Arce, a small town in the heart of Lazio region, in the area of Ciociaria also called "Alta Terra di Lavoro" (lit. Northern Labor Land), where the Liri Valley and the Latina Valley meet, a rugged land mitigated by the winds coming from the sea.
This territory has its roots in the most ancient history that makes Extra Virgin Olive Oil a typical and millenary product.

The firm was imagined by a group of friends, united by the same passion: to bring abandoned olive groves, rich in centuries-old olive trees, back to life and combine tradition with the knowledge of the most advanced techniques, so to extract the excellence from the most precious fruit of the “Ciociaria” hills in a delicious olive oil of the highest quality, to be brought to tables all over the World.
During their work of recovering numerous local olive groves, the ColleFraioli workers discovered olive trees of over one-hundred-year-old cultivars which were believed to be extinct. One of the next ambitious projects of the “ColleFraioli” group of friends is to create new olive oils from ancient and currently unknown cultivars.
The production of ColleFraioli olive oils is carried out according to the most careful processing techniques starting from the cultivation of olive trees up to bottling. Pruning waste and pomace are processed with manure and, once macerated, are reintroduced into the soil, so as to avoid the use of chemicals, for an actually organic olive oil.
ColleFraioli offers olive oils made from selections of local cultivars extracted in purity or in persuasive blends.
Since the first productions, ColleFraioli’s olive oils have received important international awards and prizes, such as the GOLD medals, both at the 2019 NYOOC World Olive Oil Competition in New York and at the London Award 2020, and also the very recent Olive Oil Japan Silver Award 2021, just to mention a few.

Olive variety: Moraiolo, Leccino, Itrana.
Description: Connubium extra virgin olive oil is cold extracted immediately after the olive harvest.
It has green tones with intense golden reflections.

Aroma and flavors: it opens up to a broad and refined nose with a pleasant herbaceous fruitiness of medium intensity.
It expresses in its entirety vegetable notes of tomato, followed by clear notes of almond and aromatic herbs fragrances, mostly perceived in the final phase.

On the palate there is a good basic balance.

Processing:
Our olives have been pressed together with fresh lemons, in order to obtain a delicate dressing with the distinct notes of freshly picked lemons.

Ingredients: Olives, lemons.

Color, scent, flavor:
Yellow-green color with golden reflections.
Fresh and delicate aroma. The characteristic citrus scent of fresh lemons is clearly recognized together with the herbaceous notes of olives.
Aromatic, fresh and very pleasant condiment.

Use suggestions: ideal to add raw to many Mediterranean dishes, especially on fish, white meats and salads.

Processing: Chili peppers grown in “Ciociaria”, dried and finely
chopped, are infused in our extra virgin olive oil. The obtained
olive oil brings out the aromatic and spicy notes of chilies.
Ingredienti: Extra virgin olive oil 98%, chili peppers 2%.
Color, fragrance, flavor:
Bright amber color with orange reflections.
Elegant aroma and balanced spiciness. You can recognize the
herbaceous notes of tomato and bitter almond given by the
olive oil, and also the vegetable and spicy notes given by the
chili peppers.
Aromatic condiment, persistent on the palate but never
unpleasant nor intrusive.
Use suggestions: ideal to add raw on Mediterranean first
courses, pizza and bruschetta, legume soups, fish dishes,
sauces, non-mature cheeses.
