Antico Pastificio Sannita was born in Samnite land, rich in history and tradition. “Authentic” land, thriving with evidence of ancient civilizations; Sannite, Roman, Longobard and Norman dominions have made this territory an open-air museum.
On the wonderful hills of the Sannio, we produce our homemade pasta, selecting quality raw materials and using the water of springs that flows directly into the valleys of Monte Taburno.
Our family started its production activity as far back as 1928 in Benevento. The goal has always been to ensure a high quality product. Today, the passion, the art and experience allow us to create a unique and unmistakable flavour. Through constant monitoring of raw materials, the pasta is produced with carefully selected beans. We still traditional processing methods that require time and dedication. The result is an ancient flavour pasta, bindable, for flavor, aroma and texture, homemade pasta. The third generation of a centenary tradition of Artisan Pasta makers. As in the past, we use the ancient techniques of slow processing, cutting, laying and manual packaging, reproducing the natural and slow drying in static cells. Today as yesterday we dedicate ourselves with loving care in all phases for each shape, offering a product “craftsmanship” with respect for tradition.
We created The PAPALINE, THE SHAPE OF PASTA THAT PAYS TRIBUTE TO THE HISTORY OF BENEVENTO
A unique shape of pasta entirely ideated by us, that pays tribute to the history of the city of Benevento, papal city for eight centuries from 1077 to 1860, a papal island in southern Italy. Benevento was administered by the papal representatives called "pontifical Rectors", a long domination that involved a frenetic and tireless realization of churches, monasteries and convents and the Palazzo dei Rettori as well as the splendid Villa of the Popes.
Our shape of pasta takes its name from the round headgear worn by the Pope, it represents a tribute to the city that saw our business born in 1928 and synonymous with a strong territorial identity of our production. Its particular shape, inspired by the papal headdress, round and extremely concave, is able to pick up any seasoning in one bite; The Papaline are rough, porous and thickness such as to maintain its shape intact even after cooking.
And we also created the PASTA STREGATA, According to the legend spread in the XIII century, this is the magic formula that the witches of Benevento recited before doing wild dancing under the great Noce tree, on the banks of the Sabato river.
We created the PASTA STREGATA, Artisanal pasta Flavored with Liquore Strega with a unique flavor, inspired by the legend of our territory. A pleasant discovery for the palate and a high digestibility thanks to the combination of the natural aromas contai¬ned in the Liquore Strega with the production methods used. Our Pasta Stregata is made with high quality Italian durum wheat semolina, with the use of Bronze dies, with slow processig and drying at low temperatures.
A unique Pasta, as unique is our Sannita territory.

We reproduce the natural drying that once took place in the light of the sun and in the wind, slowly for about 36 h at low temperature. This technique allows us to preserve all the nutritional values of the semolina: maintaining proteins, antioxidants and fiber; essential for a healthy diet and the digestibility of our pasta. We use only high-quality italian durum wheat semolina, extracted from the heart of the grain of wheat, amber yellow color to high tightness during firing, the characteristic flavor and by the almost total absence of black tips. The quality of proteins and uniform granulometry allow to develop maximum semolina characteristics such as taste and smell of pasta. The bronze dies represent for us the artisan pasta tradition; associated with a very slow processing and extrusion and the constant care that we devote to them, to give the pasta a rough surface and porous, can pick up all the flavours and colours of the seasoning.

the King of Italian Durum Wheat Senatore Cappelli is a grain like those of the past, it has a high ear, deep roots, personality, intense aromas and rich flavor. It is considered “elected race” of italian durum wheat and it contains higher percentages of lipids, amino acids, vitamins and minerals, as well as characteristics of high digestibility. The grain Senatore Cappelli that we have selected is produced a few kilometers from our company, this short distance makes possible the denomination of a short line of our production. The whole wheat semolina obtained by grinding stone is delivered in our production site soon after grinding. It is processed and dried slowly at lowtemperatures by us, just so we can give our pasta rich flavor and integrity in vitamins and minerals.
