Acetaia Guerzoni produces Traditional Balsamic Vinegar of Modena PDO, Balsamic Vinegar of Modena PGI, Wine and Apple Vinegars, Condiments, Grape Musts and Saba (cooked grape must), all coming from the family farm and the
surrounding territories, from organic and biodynamic cultivation.


HISTORY AND CULTURE

The company born in 1970 by its founders Felice Guerzoni and Iride Bardeschi, who decided to focus, ahead of their time, on organic and biodynamic
cultivations, not as a marketing strategy but out of convincement and sensitivity to the environmental sustainability and consumer health.
Today, the son Lorenzo Guerzoni, CEO of "Acetaia Guerzoni", carries on this important cultural legacy with dedication and modernity.

Our most precious Balsamic Vinegar of Modena, obtained from typical red vines after long aging in oak barrels. A very dense condiment, which harmonizes sweetness, acidity, fruity notes and hints of wood.

The Gold Label is our finest Balsamic Vinegar of Modena PGI. It is made with only two ingredients, predominantly "cooked must," which is obtained by the traditional slow cooking over direct fire of grape must, a process that lasts about 48 hours. This slow cooking enhances the taste, flavor, and nutritional substances of the grapes, giving the balsamic vinegar an unmatched softness and quality.

The addition of Organic and Biodynamic Wine Vinegar, combined with a long refinement in 220 liter oak barrels, results in a product that is unique in the world for its quality and sustainability.

You will receive the product in our exclusive eco-friendly gift packaging. Each bottle, sealed with a crown cap, is encased in a "grape paper" sleeve, made by incorporating 30% of byproducts from wine production, and sealed with a sophisticated ribbon. Additionally, inside the package, you will find a handy measuring cap housed in its own little protective box.



An almost lost recipe, which the Guerzoni family has always preserved: from the must reduced over direct heat for at least three days, a concentrate of flavor and sweetness is born, which is increasingly used in contemporary cuisine.

Commonly called Saba, it is produced by the Guerzoni family, with a now forgotten process, by cooking the grape must for at least three days, over direct heat.
The use of the Saba has very ancient origins: the first to use it were, in fact, the Romans (Sapa is actually the Latin name), as proofed by the recipes of Apicius, a renowned cook of the time.

In addition to the 250 ml bottle, it is possible to have the 500 ml bottle.

The Guerzoni grape must is made according to the ancient recipes of the peasant tradition for the preparation of the must for the sugoli (grape sauces): the must comes from the first pressing of the grapes and then cooks slowly together with their skins, in order to intensify its flavor and color; it is then pasteurized and bottled in a vacuum, without the addition of any preservative.

RED - It is obtained exclusively from the red grapes by our company, such as Ancellotta.

WHITE - Guerzoni white grape must, is made with Trebbiano grapes from Concordia sulla secchia vineyard. It comes from the first pressing of grapes in advance to create the right acidity and sugar content ratio; it is finally pasteurized, without adding any preservatives.
Its typical acidity makes it refreshing and pleasant.. The total absence of alcohol makes it suitable for all ages.



A concentrate of flavor that gives rise to a surprising sensation of freshness. A condiment that mixes, according to carefully calibrated proportions, wine vinegar and concentrated must from organic and biodynamic Italian white grapes.

The entire production chain controlled by Acetaia Guerzoni, in order to guarantee the origin of the raw materials. Obtained from the skilful mixture of wine vinegar and white concentrated must, it does not contain any type of preservative or coloring. Exclusively from white Italian grapes, it is suitable for daily use.
Unique in its color and flavor. Often appreciated also in place of Balsamic Vinegar.



An innovative product that aims at obtaining from apples the same experience as the Balsamic Vinegar of Modena but only containing apple juice concentrated mixed with apple vinegar.

The organic certification ensures that the apples used in the production of this dressing were grown without the use of synthetic pesticides, herbicides or fertilizers, making it a healthier and more environmentally friendly option than conventional dressings.
It is a product that maintains all the nutritional and qualitative qualities of apples.
