RISO MAGNO

Who we are

Riso Magno is a company made of young professionals in love with healthy and genuine products. We select the most valuable quality of rice 100% made in Italy. It is cultivated in the Piedmontese lands, specifically in Vercelli, cradle of absolute excellence.

Historical anecdotes tell that was Alexander the Great who contributed, among others, to spreading the rice across Europe and he is the one we drew our inspiration from to name our company. We are committed to deliver to your place a high-quality product that is also easy to cook and healthy.

Nevertheless, not all rice types are created equal: there are many varieties and by-products at the expense of quality and it is, therefore, important to know what you will be cooking. This is the reason why our priority towards our customers is to pick local delicacies that come from Italian culinary traditions and a shared passion for genuine and nicely made products.

Our Philosophy

Our philosophy coincides with our goal: introduce and get people worldwide to appreciate our passion for a niche product that is at the same time healthy and environmentally conscious. This is why we choose to collaborate exclusively with a network of specialized producers who adopt sustainable farming in order to protect the land resources and their inhabitants.

Riso Magno’s commitment towards consumers translates into product quality assurance in every single stage of processing or delivery up to the care to detail about the packaging.

Our company is proposed to pursue the traditional values and the absolute quality of our rices at all times as pride of the Made in Italy.

Our Rice Varieties

Riso Magno is a trading company that sells the best selection of rice 100% Made in Italy such as Carnaroli, Baldo, Carnaroli Integrale, Arborio, Ermes, Venere.

We follow the traditional processing method (Metodo Classico), that means that the rice is cultivated with sure quality grains and reflects 100% in purity the variety indicated on our packaging.

RISO MAGNO processes its rice selection with the oldest method: the stone work. Nowadays this method is fallen into disuse for reasons of industrialisation but we choose the most natural way. Thanks to the stone work, the grain keeps its natural color and, mostly important, it keeps the same nutritional properties of a wholegrain rice. The GERM, in fact, remains located in its original place.

The GERM is the most precious part and we proudly treasure it into our grains. As we said before, we never remove it from its place! Although this procedure is not easy, thanks to the thoroughness we put into the processing, the focus on quality rather than on big productions, we succeed in keeping the grain as rough as possible, preserving the mineral salts, the vitamins, the proteins and the enzymes that lay in the most external layer and in the germ.

When you purchase Riso Magno you purchase a certainty!

– 100% purity of quality;
– evenness in the dimensions of grains;
– excellent firmness during the cooking;
– unique palate sensation;
– superior porosity which means that all condiments are better absorbed;
– GERM always present in the grain.

Our Packaging

Riso Magno is presented in a pure cotton bag that well reflects how our brand identity pays tribute to authenticity and local tradition.

Moreover, the tin box is meant to store this delicacy once you have opened the bag. No more elastics or pegs to preserve your purchase but a certified container in accordance with European agri-food standards.

This is to guarantee the freshness and allow more practical storage of the product. Our Vacuum pack fully preserves its natural fragrance for long without artificial preservatives or additives.

GOLD MEDAL at Dubai International Taste Awards

Ideal for:
– Risotti al dente;
– Gourmet dishes;
– Rice salads.

Cooking Time
16 minutes for boiled rice
18 minutes for risotto

The grain is long, with pearled colour and the taste is slightly sweet. The germ is located in the brown extremity of the grain and usually features only in the brown varieties whereas it is always present in our grains.

Thanks to the old technique of stone whitening, the germ remains located in the same place, inside the grain. This methodology allows all our rice varieties to keep the organoleptic properties of the wholegrain one.

This procedure ensures the exclusiveness of a totally genuine product because we avoid the further step that removes the germ and reincorporate it in a second time.

Under the name of Carnaroli, other varieties of the same product category can be traded (for example Carnise, Keope). The criteria of classification respond to the product shape and sizes and not to the substance (this is for industrial market reasons). Riso Magno 100% Carnaroli ensures high quality. Even if you have always eaten Carnaroli, you will easily tell the difference in the flavor and cooking.

Ideal for:
– Risotti al dente;
– Arancini;
– Dessert;
– Rice salads.

Cooking Time
15/20 min.

The grain is long and half-round, the colour is pearled white with a nucleus rich in amid.

Riso Arborio is a well-known product: it is in fact appreciated for his characteristics as it boasts high performance when is being cooked. During the preparation, in fact, grains cook perfect and evenly yet keep the nutrient rich core, “al dente”.

The stone whitening technique allows us to maintain the germ into its original location, which means keeping the nutritional and organoleptic values.

We select exclusively 100% Arborio grains like for all other varieties we trade.

Arborio is more difficult to cultivate as it is more sensitive to climate changes which leads to production drop.

Ideal for:
– Risotti al dente;
– Soups;
– Arancini;
– Rice salads.

Cooking Time
14/16 min.

The grain appears long and translucent white due to a minor quantity of amid inside the grain.
Baldo rice is probably uncommon to the laymen but it is amongst the best rice in Italy and for sure it does not fear the comparison with the more popular varieties.
The old technique of stone whitening allows to keep the nutritional and organoleptic properties of the grain.

Even for Baldo there are other varieties belonging to the same product category (for example the Galileo.)
The criteria of classification respond to the good’s form not the substance (reasons of industrial market).

With Riso Magno 100% Baldo the quality is assured and you will easily tell the difference in the flavor and in the cooking.

Ideal for:
– Risotti;
– Gourmet dishes;
– Sides;
– Rice salads.

Cooking Time
40 min. boiling water
20 min. pressure cooker

Ermes rice, or red rice, features a long and narrow wheat grain, red colored, it is classified as brown rice.

This variety is rich in anthocyanins which are antioxidant substances that characterize also the black rice and it releases this natural rusty red colour. Most of the people still do not know the healthy properties of this rice that is also very tasty.

Its delicate aroma makes it easily recognizable, like freshly baked bread.

– Risotti;
– Gourmet dishes;

– Rice salads.

Riso Venere is a wholegrain black variety, also known as “Italian black rice”.

Despite the unconventional colour, it is an Italian rice, originally from Vercelli.

The colour, which is totally natural, comes from the anthocyanins which are strong antioxidants. The grain is rounded and it is ideal for many recipes that will gather a creative contrast of colours with supply of nutrients.
