We decided to create our farm as if it were a “factory” which can be utilised in a multitude of different ways.
On the one hand, it can be considered as a farm in the strict sense of the word, which refers to the agricultural land and the countryside we own and in which we operate.
On the other, the farm can be described as a place of activity, a “factory” in the English sense of the word; meaning a production plant, a place in which a mill is located and where olives are transported and transformed into oil.
The farm can also be considered as a kind of “think tank”; a place for meetings and deliberation, the ideas from which are squeezed, distributed and shared in addition to the olives themselves.

The place.
Our countryside cultivated with olive trees, vines, legumes, cereals and other crops, are located in various localities of Salento, in Southern Puglia, making up a total of 45 hectares.

It is not a single corporate body, but the result of multiple funds and holdings located in the countryside of San Pietro in Lama, Lequile, Monteroni, Nardò, Copertino, Leverano – not by choice, but because it is the nature of the specific area in which we operate.

The company’s corporate and operational headquarters are based in San Pietro in Lama, in Salento, South of Puglia, in the province of Lecce, on the border of the capital.

Tatanoso is a blend of oils obtained from Frantoio, Nociara, Cellina di Nardò, Ogliarola di Lecce and Cornulara olives.
The percentage of these three distinct types of oils is not stated, not only because it varies from olive to olive cultivation, but because it is what makes the oil distinctly unique, and is therefore, kept secret.
Scents: medium intensity fruity aromas, strong nuances of green olives, hints of meadow grass and other fruits.
Flavors: Notes of green artichoke, good smoothness and harmonious always well-orchestrated bitter and pungent notes,
introduced by an initial sweet flavour.
The background fragrance on the finish shows hints of almond, young grass and a slight pungent note.
Pairings: it can be used as a dressing or for cooking. Being a medium fruity olive oil, it lends itself to a variety of uses, without
ever smothering the flavour of other foodstuffs.
Ideal with bruschetta, pulse dishes, vegetable creams, rice salads, grilled fish, barbecued meat, fried fish and
vegetables



Lucrezio is a blend of oils obtained from Cellina di Nardò, Ogliarola di Lecce and Cornulara olives.
The percentage of these three distinct types of oils is not stated, not only because it varies from olive to olive cultivation, but because it is what makes the oil distinctly unique, and is therefore, kept secret.
Scents: Medium intensity fruity aromas, with grassy notes. Fresh and clean, with almondy and other nutty hints.
Flavors: On the palate, the impact is soft and well-rounded, sweet, opening out into well-orchestrated bitterness and
pungency with vegetal artichoke flavours.
The background fragrance on the finish shows hints of green almond, spring meadows and a slight pungent note.
Pairings: Versatile, it is ideal both used raw as a dressing – to bring out, carry and amplify the flavours of other foods – and for
all forms of cooking,
Ideal with green and seafood salads, with pasta, rice or legume-based dishes, as well as with steamed vegetables,
grilled white meats and medium-aged cheeses.



Tatanoso virgin olive oil is obtained mainly from Cellina di Nardò and Ogliarola di Lecce olives, harvested directly from the plant through the use of combs, crushed with stone wheels and cold pressed.
Ripe olive fruitiness with a hint of almond, ideal for use in the kitchen both in cooking and raw on soups, pasta, vegetables, cheeses and all types of meat. Also excellent for frying.
