Carus is a family winery located in the north area of Chianti Classico, in San Casciano in Val di Pesa, one of the best production areas of Sangiovese.
The owner Guido Carissimo runs in the wine business since four generations and in 2011 bought Carus entirely renewing the winemaking process of the estate.
The farm has 13 hectares of vineyards among the hills of Chianti Classico, with an altitude between 170 to 300 meters above sea level. The philosophy of Carus is based on producing high quality wines respecting the tradition of Chianti terroir. We cultivate Sangiovese, Syrah, Merlot, and Cabernet Sauvignon. We use sustainable agriculture adopting modern technologies with low environmental impact. Since 2018 we obtained UE organic certification.
