SUNNN was born out of the love and the desire of its founder to bring the History and the Culture of the Ancient Lands of Sannio though one of its excellence, the EVO oil, to the whole world.

Our olive trees strive in the hills around small towns in Molise, South of Italy, since centuries, the harvesting is made with care and attention, and the milling is done with the most modern techniques in order to preserve the EVO oil at the best of the quality.

The Lands of Sannio tell us about resilient and sturdy people, with a great heart and strong hands, brave people who fought the Ancient Romans for almost a hundred years to defend their freedom, people who found the way to survive in difficult territories, forgotten for long time.

The logo of SUNNN is a mystery to solve: made up with three Uroboro’s, to symbolise the cyclical nature of time, and to remind the trilobate breastplate of the Samnite soldiers. Our logo, like our oils, is full of history and meaning.

We want you to taste an exclusive bit of Italy, to smell the fragrances of the Appennini and the Adriatic sea, to listen to old stories that only few know.

The cultivars we utilise are unique and local of small areas, and this make our oils a product that only few can have, inimitable in the colour, the smell and the taste, and rare. Monocultivar Extra Virgin Olive Oil produced in Italy from Gentile di Mafalda olive variety. Product of a “Zero Residue” certified supply chain. This particular variety is the last Samnite germplasm, officially registered just a few years ago.

TASTING NOTES
A shiny, dense, yellow garment.
It intensely smells of green tomato and aromatic herbs, with the triumph of basil leaves. A green nose sweetened by white fruit.
The gustative structure is extremely fine. Aromatic perceptions of pinuts and almond, accompanied by pleasant bitter flavors of fruits of the garden, such as cardoon and chicory.
A long pungent finish which reminds to red chili peppers.

HISTORY AND CURIOSITIES
Centuries-old plants: the youngest trees are 80 to 100. This Cultivar was “abandoned” in the 70s and 80s because of its low yield (in favor of the more productive Leccino variety) and subsequently revalued for its aromas and unique flavors. As it is incredibly resistant to adversities, this Cultivar has “self-selected” and adapted to the climate change over time. A “strong” Variety! Low yield but excellent quality.

Mayonnaise, herb sauces, vegetable pâté, Pesto, eggs, Farinata, Focaccia, Pizza, salad, seeds and mushrooms, Pasta e Fagioli (pasta and beans), artichokes, asparagus and spinach, raw shrimps or prawns, seafood carpaccio, Baccalà Mantecato (creamed codfish), mashed potatoes, ice-cream, mousse, spreads.

CLIMATE AND ALTITUDE
The olive groves are at 600 metres above sea level, in a depression surrounded by mountains which function as a protective barrier to possible frost (though it has become less frequent in recent years), providing for excellent thermal excursions.

TASTING NOTES
Golden yellow color, crystal clear and fairly dense at the sight.
A lively nose, cheered up by a balsamic-spicy rhythm with a red note of tomato.
In the mouth, a pungent-bitter duet rises in perfect tune with the harmonic structure.
Long spicy echoes in the finish.

Rare red meat, steak tartare, roast beef, Pinzimonio, Sicilian Caponata, Ribollita, seared tuna and swordfish, Alici in Tortiera, Fagioli all’Uccelletto.

CLIMATE AND ALTITUDE
Olive groves at 400 metres above sea level. Thermal excursions ideal for olive growing.

TASTING NOTES
Bright golden yellow, quite dense oil.
A fine and elegant fragrance, reminiscent of olive and green apple, fresh almond and lettuce.
The mouthfeel is gentle, thanks to a mild pungency which gives way to a pleasant, more perceptible bitter sensation.
It ends with the appealing return of almond aroma

HISTORY AND CURIOSITIES
Aurina is a very old cultivar (one of the oldest in Italy). “The most sought-after green gold in the ancient world”, already known to the Samnites (between the 7th and the 6th century B.C.) and then to the Romans. Plinio il Vecchio talks about it in his writings. Some olive groves are terraced, which makes the cultivation very difficult and expensive (no mechanical machinery for pruning, mowing, fertilization, and so on).



Blend of three Cultivars (Leccino, Leccio del Corno and Gentile di Mafalda) that make the product unique. Extra Virgin Olive Oil from a “Zero Residue” certified supply chain.

TASTING NOTES
Clear, dense, yellow gold.
A neat olfactory profile, outlined by spices and sweet fruits.
Well-defined on the palate, it proceeds in balance on the bitter-pungent axis, with a taste-aromatic correspondence which persists throughout the long-lasting finish.

FOOD PAIRINGS
Beef carpaccio, grilled white meat, roasted tomatoes, boiled legumes, soups, “Aglio, Olio and Peperoncino”, (garlic, oil and chili pepper).
