The farm of SAN LEO is one of the oldest estates around Arezzo in Tuscany.
We cultivate the vine and vinify the grapes according to the methods of the rural tradition of Central Tuscany and the wine we obtain is the result of a simple process based on natural techniques.
On the hills outside the city, mainly facing south, the vineyard is divided into various plots identified with the names of the old farms of the sharecropping era.
The vines, trained by the spurred cordon and Guyot systems, are between 50 and 5 years old and have a planting density of 4,000 plants per hectare. Vineyards are renewed while maintaining the autochthonous vines and improving crop efficiency in compliance with the protocol of organic agriculture and modern agronomic practice.
The grapes grown with organic method, crushed and left to ferment naturally, are "governed" with fresh must, left to mature without the addition of any additives and bottled after a mechanical stabilization and filtration process.
The oak barrels of our cellar are the witness of the winemaking technique of the past and our vinsantaia with its 270 barrels ("caratelli") enshrines a unique product of the Tuscan tradition. A modern winery allows us to achieve quality on the winemaking in compliance with the organic farming protocol

Our VIN SANTO DEL CHIANTI D.O.C. MAESTA' DEL BAGNO it is the product of a few strict rules and simple ingredients: selected Trebbiano grapes with the addition of Malvasia in due proportion, spread on "reeds" and dried until after Christmas, "crushed" and put into small casks (caratelli) to mature with the precious "mother". After four years of ageing in the natural course of the seasons, we get less than half of the quantity of the original must



Our organic ROSSO TOSCANO I.G.T. SAN LEO is the result of our commitment to recover the traditions of the land of Arezzo. It is the "everyday wine" obtained from Sangiovese and Foglia Tonda vines that the farmers brought to the canteens of the city



The extraction of oil by cold pressing from grape seeds is a very complex operation if managed within the process of wine making and moreover under the organic farming protocol.
A remarkably different process from the one of large distilleries that work much larger masses of product with techniques that are surely more efficient but certainly not able to enhance the freshness and virginity of the product that we get on the farm.
The grape seeds are extracted during the fermentation of the must in the delestage phase. After washing with water to eliminate residual acidity, they are dried up to a residual humidity of 10 per cent.
Our organic Grapeseed oil is extracted by continuous cold mechanical pressing without the aid of solvents.
And it is not subjected to any refining process and bottled as it is.



AGLIONE ORGANIC (Allium Ampeloprasum var. Holmense)
On the northern edge of the Val di Chiana, we cultivate by using organic farming methods this particular horticultural plant characteristic of our region.
Our AGLIONE is organic and also available for transplanting as well as fresh produce for cooking.
