The effort to keep alive the tradition of savoir vivre and make unique and unrepeatable feelings accessible comes from a family passion for the vineyard and the bucolic environment.

The result of this journey is Staffilo, from the ancient Greek σταφύλια (grape), an organic prosecco enhanced by the proximity of the Venetian shore, the land chosen by the Doges as their personal wine cellar.

Staffilo reflects wine's properties, which are known to be a remedy for body and soul and have been appreciated in moments of conviviality since the days of the Serenissima Republic.

Staffilo contributes to this with the added value of organic agriculture, the conscious choice required to significantly reduce the environmental impact and the pressures which our land suffers from conventional viticulture.

Staffilo's organic method is certified in accordance with art. 7 of MipA D. n. 18321 of 09/08/2012.

Staffilo Prosecco DOC Rosé is made from a blend of exclusively organic Glera and Pinot Noir grapes.

The soft pink colour and the fine bubbles give It a pleasant and bright appearance, the floral notes of rose petals, peony and its fruity bouquet a refinement in the balance and in the olfactory returns with an enveloping and delicate taste. We recommend to serve our Prosecco DOC Rosé at a temperature of about 6-8° C in a pairing with fish crudités or with tempura-cooked Adriatic prawns served with oranges and fennel salad.

The term Extra Dry refers to a type of Prosecco that is softer than Prosecco Brut due to the length of the second fermentation, which gives it a higher residual sugar and greater sweetness. Prosecco Rosé Biologico Staffilo has 16.00 g/l of sugar; the residue gives a greater sparkle and a more delicate taste to the palate.

Prosecco Rosé Extra Dry is marked by its soft pink colour, fine bubbles and floral notes of rose petals that combine a refined balance and olfactory returns with an enveloping and delicate taste. By virtue of its taste, the recommended pairings are fish crudités and Adriatic prawns in tempura served with oranges and fennel salad.



Fine and persistent perlage, inebriated with floral aromas of broom and gentian with a vegetal note of sage and mint, enlivened by fruity aromas of grapefruit, pineapple and golden apple. Soft, savoury and persistent on the palate, pleasantly lively and light.

Extra Dry

The term Extra Dry reveals a type of Prosecco which is softer than Prosecco Brut because of second fermentation’s length, which gives it a higher residual sugar and greater sweetness. Prosecco Biologico Staffilo contains 14.00 g/l of sugar; the residue gives a greater sparkle and a more delicate taste to the palate. Prosecco Extra Dry is characterised by a delicate balance made possible by its fine perlage, its taste tending towards sweet with light floral notes and its straw colour. By the nature of its intense taste, the recommended combinations are delicate foods such as white meats, fresh cheeses and fried fish.

Millesimato

The term ``Millesimato`` is given to Prosecco, through precise production rules, when it is obtained with 85% of grapes from a single vintage; this feature guarantees a higher level of quality with positive repercussions on taste and visual impact. An example of this is Staffilo, an organic Prosecco DOC millesimato, obtained only from the best grapes of the current year; the use of grapes' blend from different years would compromise the possibility of enjoying the typical organoleptic properties of our Prosecco.



It has a pale straw yellow colour with greenish hints and is marked by a fine and persistent perlage. The bouquet is dry and crisp with notes of fresh fruit and summer flowers. Finally, it is dry with great intensity on the palate.

Extra Brut

The term Extra Brut indicates a type of Prosecco with a very low residual sugar, between 0 and 5 g/l. Staffilo Organic Prosecco Extra Brut contains 3.00 g/l of sugar; the residue gives a very dry character, which allows Extra Brut to be served throughout a meal. Prosecco Extra Brut is marked by a delicate balance made possible by fine perlage, a dry and decisive taste with fruity and floral notes and the pale straw colour. By virtue of its qualities, the recommended pairings are vegetable-based first and second courses, cheeses such as ricotta and cured meats.

Intense straw yellow in colour, inebriated with fruity aromas with hints of peach and apricot, enlivened by tropical fruit aromas and notes of wild flowers. Dry, full and velvety on the palate. Pleasantly persistent flavour.
The Venetian DOC

The acronym underlines the willingness of the north-eastern Italian supply chain to ensure the protection of the Pinot Grigio designation of origin, while also enhancing the entire production previously marketed under the IGT denomination.



With its intense and brilliant ruby colour, Merlot is defined by hints of red fruit, strawberry, blackberry and violet. The flavour is warm, harmonious, persistent and velvety with ageing.
The term IGT describes a type of certified wine, in fact the acronym means ``typical geographical indication``. The abbreviation IGT is synonymous with guarantee. Before being branded IGT, Merlot is scrupulously controlled and must necessarily satisfy certain characteristics, established by specific laws and regulations. The typical geographical indication refers to the region in which the Merlot is produced. In many cases, these are large areas clearly demarcated by regional borders.
