THE STORY OF A GREAT LOVE FOR PASTA
In 2007, in their small artisanal pasta workshop Marcello Carbone and Addolorata Bramato decided to pluck up the courage and believe in their great passion: love for the Apulian traditions.
Apulia is the biggest producer of durum wheat in Italy with an estimate of about 343 thousand hectares of cultivated land and a well-deserved first place in terms of quantity and quality. To produce good fresh pasta, filled or not, long or short, first of all, you need pukka sheet pasta exclusively made of durum wheat semolina. This ingredient, in fact, makes the sheet of pasta elastic and guarantees an excellent quality of holding its shape when cooked, that is fundamental when the product is used.
Over the years, high demand for their products allowed Marcello and Ada to invest in technologies through the purchase of modern equipment and the guarantee of meticulous controls at each step of the production.
An inherited tradition and the genial insight to use freezing as the best and most natural and ancient method to preserve pasta, the only that allows to not use preservatives, were the main aspects that made possible the creation of the new brand Carbone, amore per la pasta (love for pasta) in 2016.
Having achieved excellent results at home and abroad, when in 2019 their three children took over, another brand is created: Lafarges. The name Lafarges, in fact, is an acronym for the first few letters of the names Sebastiano, Gabriele and Francesco.
Certification is currently underway according to BRC and IFS standards.
