We are Carmen and Giusy, two women, two mothers, two sommeliers, two expert techniques of extra virgin olive oils, linked by a passion for oil, for good food and good drinking.
It was the desire for redemption that prompted us to give life to this enterprise to give the right value and image to a food, extra virgin olive oil, which was born in an authentic and unique area in the world: our Sicily.
Our company was born in March 2019.
The love for our land, a strong reference to the origins and history, handed down to us by our grandparents, an in-depth and specialized study of the sector and the continuous challenge towards innovation have led us to create an excellent extra virgin olive oil, able to interpret and tell a wonderful territory, a land that over the centuries has welcomed different peoples and cultures in an overwhelming embrace.Our olive grove is located in the western part of Sicily, in the province of Trapani, between Selinunte and Marsala, in the Archaeological Park of the Cave di Cusa. Embrace was born here, on this timeless island, where a journey becomes a journey of the heart in which one is overwhelmed by an embrace that one cannot do without. We produce two types of oils: Evo Embrace Nocellara del Belice and Evosì blend Nocellara del Belice and Biancolilla.

We adhere to the rules of guided struggle and integrated struggle, respecting the environment and the natural ecosystem and biodiversity.
They are certified IGP Sicily, which defines products that are identified by the peculiarities linked to a specific territory and which comply with a production specification in which the "historical" origin in the declared territory is proven. Also it is certificated eco-sustainable with the Friends of the Earth brand for the entire production chain.
They are 0-residue oil free from chemical treatments or pesticides harmful to health.
A thousand trees with an age between 60-70 years
Harvesting method: carried out by hand from the early hours of the morning, when the temperature is still cool. The olives are defoliated, selected and placed in well-ventilated 20 kg crates. They are then taken to the mill, 10 minutes from the olive grove, carefully selected, and pressed within 6 hours of harvesting.
Crushing and Extraction: Cold milling in a continuous 2-phase cycle, with hammer crushers, malaxing at controlled temperature in the absence of oxygen, with disc separator.
Filtration and Storage: the oil is filtered and stored in silos under nitrogen in a thermo-conditioned environment and finally packaged in batches according to requests.
A territory, a climate that make our quality oil unique in the world, impossible to reproduce in other areas, with a clear and unrepeatable identity, enriched by a landscape, historical, cultural context and by the human factor represented by knowledge, professionalism, awareness , tradition, passion.
A unique oil, capable of expressing the perfect fusion between environment, agricultural management and transformation of the fruit into an oil capable of enhancing all the organoleptic characteristics of a cultivar with a long Sicilian tradition.

Embrace. A mono-varietal from Nocellara del Belice
Most valuable cultivar among the Sicilian indigenous varieties. It is present on the Sicilian territory, in particular in the Trapani countryside. Although Pliny and Cicero attribute the introduction of the olive tree to Greek colonization, archaeological research instead documents that the olive tree was introduced in Sicily probably already in prehistoric times.
Organoleptic properties
Scent
On the nose it has a strong character as well as the land in which it is born. It has a medium intensity green olive fruitiness. Floral, accompanied by notes of almond, green tomato, cut grass, field vegetables,
artichoke and finally a nuance of aromatic herbs.
Taste
On the palate it is enveloping and elegant, and confirms the breadth of the vegetal notes, revealing pleasant bitter and spicy sensations in a harmonious balance. Gently spiced with a mild sweet finish. Fresh and persistent.
Paring Embraces and wraps each dish in its different shades, enhancing the flavors.
Uncooked Raw it is ideal for raw fish appetizers and meat and fish tartare. In first courses of fish such as tagliatelle with red shrimp and bottarga and lemon peel, or with fresh broad beans and salmon, busiate with pink shrimp, orange and artichokes,pasta with sardines and fennel.In cooking it is ideal in the preparation of roasts and fries and first courses, thanks to the fact that its smoke point is higher than other types of oils.
When cooked, it is perfect for meat ragout, pork loin with honey and orange and onion, chicken with mushrooms, walled octopuses, and spatula ragout.

 Its use in pastry is surprising, on vanilla ice cream with berries, on a fennel granita, for the preparation of orange and cinnamon cakes, lemon mousse, and chocolate cakes.

In Sicily, eating is a ritual: food is first eaten with the eyes, then the aroma is inhaled and finally tasted. Sicilian cuisine is a real cultural treasure chest, the perfect amalgamation of the influences of different cultures. A strong and fertile land, with a favorable climate in the center of the Mediterranean, which has developed a natural vocation for olive growing with products with unique organoleptic characteristics. A sensory journey made not only of aromas and flavors, but of history and traditions, a journey of taste between the sacred and the profane, which have given life to unique dishes in the world. Organoleptic properties
On the nose it shows a light fruity of green olive, fresh and citrusy with slight aromas of wildflowers, aromatic herbs, hints of almond, and artichoke and tomato.
On the palate it is fine and delicate, revealing pleasant bitter and spicy sensations, with an intriguing finish, spiced with white pepper.

The flavour gives a briny and marine sensation that makes delicious and succulent dishes such as seafood salad, orange and fennel salad, chicken salad, fresh cheeses, vegetable soup, fresh pasta salads, spaghetti with clams, and finally it is perfect with pizza and bruschetta.

Secret is a blend of ancient sicilian cultivar from olives of centuries-old trees, which overlook on the Mediterrean Sea and have always enjoyed hardened climate. It is certified as PGI SICILY, which defines products standing out for their peculiarities related to a specific territory and complying with a production specification by which the "historical" origin is proven. It is a zero-residue oil free from any chemical treatment or pesticide dangerous for health. It is certified as eco-sustainable product with the Certification Mark « Friend of the Earth ».
Secret is represented by a feminine figure : a Mother Nature who comes out from the branches of an olive tree, which offers as a gift the symbol of Embrace , the universal hug which welcomes wellness and new lifestyles. She’s accompanied by some natural elements as flowers, butterflies, bees reflecting the biodiversity and which presence is a sign of a well-functioning ecosystem necessary for the enviromental health. Olive harvest period : Harvest takes place at the beginning of olives ripening, during the third decade of
October, when there is the maximum accumulation of polyphenolic substances.
Olive harvest method : The harvest is done by hand directly from the plant (manual grazing), using boxes of 20 kg.
Extraction methods : What follows immediately after the harvest, is the olive milling using a cold, continuous-cycle, two-stage extraction system without the addition of water. The kneading stage (mixing of the olive paste in order to separate it from the oil) takes place at a controlled temperature, ensuring a perfect aroma preservation.
Filtration and Storage : Oil is filtered and stored in silos under nitrogen in a thermo-conditioned place and then accurately hand-packaged in numbered bottles with anti-topping cap, drip and pourer. Bottles are finally sealed, enclosed in a soft-touch case decorated with natural elements in golden ink.
Analytical data: acidity 0,13% (oleic acid) ; peroxides 4/5 meq. O2/Kg (expressed as oxygen) ; total polyphenols 600/800 mg/Kg (caffeic acid).
Tasting notes: Secret offers an intriguing bouquet, with a medium/ intense fruity flavor characterized by herbaceous scents, intertwined with the typical scents of artichoke, green tomato and field vegetables. An enveloping and persisting taste where bitter and spicy chase each other elegantly ; hints of aromatic herbs enhance flavors harmony. It will be your Secret ingredient in cooking.
Suggested use : Perfect to enhance meat dishes with grilled vegetables. It can also be used raw on legume soups or to season blue fish and vegetable dishes. It goes well with aged cheeses and it is ideal on ragù.
