Apicoltura il Corniolo, it's a young farm project based in Como, Lombardy Region, in the Northern Italy.
The main activity is beekeeping and honey production. We follow the main blooming flowers starting from the flateplane towards the hill from the end of winter and the spring season. We leave the bees in the mountains during the summer to find residual blooming herbaceous plants, not to produce honey anymore, but in order to prevent the feeding of the beehive with artificial external sugar source, of paramount important, especially in the period of the treatment against varroa mites. We apply in the conduction of the beehive, the principle of organic agriculture. All the bee wax used it's certified organic and also the veterinary products used to combat varroa mites, meet the requirements of organic farming. The different types of honey derive mainly from trees blooms. In the variety so called "Millefiori" are present also herbaceous blooms. Mostly, all the beehives are located in woods and forests. Our aim is to keep high quality standard level, from the breeding of bees to the honey harvesting phase. The honey extraction is performed within an external laboratory with authorization issued by italian law.

Acacia and Bramble honey

The Robinia (Robinia pseudoacacia L.) is a plant belonging to the leguminous family (Fabaceae), native from North America, in the middle of eighteenth century it was introduced in Europe, nowadays it's widespread throughout the old continent. The flowering that takes place between late April and mid-May, is affected by temperature changes and rainfall (increasingly mild and dry winters, precede spring with frost returns, or intense rainfall that spoil flowering), these are among the main causes, of the reduced production of this type of honey. Characteristic of the flowers is their pleasant scent perceived even at a distance.
The Rovo is a herbaceous plant or thorny shrub, belonging to the Rosaceae family.
Characteristics: this honey has light amber color, it is in the liquid state, over time it could crystallize. the aroma has a fruity component, to which is added an aromatic vein more fresh and floral.
Recommended combinations: medium and long-aged cheeses, does not alter the taste of herbal teas.
wild cherry tree honey

Plant characteristics: the wild Cherry (Prunus avium, L.) is a native tree of the European continent belonging to the Rosaceae family. In Italy it is present in the hills and mountains, where it is a very important source of food for wild birds. The blooming start from the second half of March to the end of April at higher altitudes.
Characteristics of honey: the colour it's amber when liquid and becomes lighter when crystallized. The initial taste is sweet, after it has a bitter note reminiscent of cherry nugs.
Recommended combinations: with fresh cheeses, or combined with yogurt or Bircher Muesli.
