The social cooperative TRITICI NOSTRI, through the brand PASTA PUA', operates in the sector agribusiness
since 2018.
It’s a young project that originates from the love for our land and that’s why we chose not to leave it, but
to enhance it by creating a brand created on the fundamental principle of valorisation of the raw materials
produced by us only and exclusively on the territory of the Capitanata (or the barn of Italy).
To strengthen even more the concept of territoriality we chose not to leave the territory of Puglia also with
regard to the processing so you can get a product really 100% MADE IN PUGLIA.
The cooperative offers a catalogue in continuous evolution at the moment composed of:
15 dry pasta labels, divided into bronze drawn, typical regional, wholemeal, burnt wheat, bio senator hats.
1 line of typical Apulian taralli made with a mixture of semolina and hard wheat and oil EVO.
3 labels of tomato datterino in glass.
1 line of extra virgin olive oil 100% Coratina.
In addition to a love for the territory of Capitanata has always had a careful look at the "Social"in 2022 to
become "Cooperative Social" following the collaboration with ASD Elpis
amateur sports association that deals with paralytic activities with people with disabilities, because we
believe that sports excellence can be excellence in life and in sport.

Traditional Italian Pasta

Apulian taralli are one of the most popular baked products ever and this is because they are something simple but good at the same time. Processed according to the traditional method, the tarallo evo stands out for its simplicity. Our product is made with re-milled semolina and anise.



Datterino yellow or red cultivated dry without irrigating on the hills of the Dauno subappenino and has a sweetness and a delicious scent. Artisan product without preservatives or dyes.

EXTRUDED THROUGH BRONZE PASTA
The bronze drawing allows the surface of the product to be porous, rough, opaque and wrinkled, with the surface covered with starch powder, which results in a greater capacity to retain various types of seasoning. The slow drying of the pasta over 24 hours at very low temperatures also means a greater "hold" of the nutrients of the pasta and the organoleptic qualities of the raw material.

When we talk about typical Apulian pasta we are talking about a real world, because the types and doughs are really the most varied and are affected by the regional culture, local traditions and the history of the places from which they originate. Pasta has always been a symbolic food of the Apulian culinary tradition, with recipes and techniques handed down from generation to generation; an ancient tradition, whose artisan charm cannot be matched by modern mechanization. Puà tries to remain tied to tradition while maintaining the culture of the territory.

BIO SENATORE CAPPELLI PASTA
This pasta is produced using durum wheat semolina: Cappelli, grown organically. Much appreciated for its nutritional properties, Senatore Cappelli flour is rich in proteins, lipids, amino acids, B vitamins, vitamin E and mineral salts such as zinc, calcium, potassium and magnesium. Instead, it contains a rather low level of gluten compared to other durum wheat semolina on the market. Senatore Cappelli flour has a high content of flavonoids and antioxidants, which have anti-inflammatory properties capable of promoting the reduction of intestinal inflammation and gluten intolerances. In addition to being particularly digestible, it has a slightly lower amount of calories than other grains and has beneficial effects on cholesterol.
