The company was founded over thirty years ago in the heart of Liguria, on an estate surrounded by rosemary and over a thousand olive trees.
In 1995, the founders chose to revive the olive grove, launching the production of branded extra virgin olive oil “Costa dei Rosmarini”: a high-quality product, an authentic expression of the province of Imperia.
From the very beginning, our oil has been chosen by chefs and haute cuisine professionals. Today we continue to work with the same passion, maintaining high quality standards and preserving the characteristics that make our oil unique.
Costa dei Rosmarini has added to its catalogue some Ligurian and Italian specialties: flavored oils, pitted Taggiasca olives, Taggiasca olives in brine, Taggiasca olive paste, dried tomatoes in oil, pesto alla genovese, red pesto with Taggiasca olives, walnut sauce, pulp of dried tomatoes, tuna Ventresca.

EXTRA VIRGIN OLIVE OIL IL TAGGIASCO
Il Taggiasco is made with 100% Taggiasca Ligurian olives.
It is an oil with low acidity, delicate and fruity taste, sweet, with a spicy just hinted.
It’s ideal for delicate recipes, as finishing condiment for pasta or for fish, meat and salads. Its delicacy enhances the flavours of the dishes without ever covering them. Also used to preserve vegetables in jars.

PITTED TAGGIASCA OLIVES
The small and sweet Ligurian Taggiasca olives have a delicate fruit fragrance. The preparation of this Ligurian speciality takes a long time because olives go trought to the traditional brine process. The stones are then eliminated and the olives are put in extra virgin olive oil.
It is a very successful product due to the delicate taste of olives and the high quality of extra virgin olive oil that can be used together with olives.
The pitted olives add a delicate extra flavour to dishes, they can be served with aperitifs or as a final ingredient added to salads and many other dishes, including sauces for pasta, fish and meat.

TAGGIASCA OLIVES PASTE
Ligurian Taggiasca olives without pits and crushed are used in order to obtain the delicious olives paste Costa dei Rosmarini
Taggiasca olive paste is mainly used in appetizers on toast and canapés. It can be added as a final ingredient to salads and many other dishes including pasta sauces, fish and meat. The olives paste should not be cooked; add it to dishes before serving them together with a bit of extra virgin olive oil.

TAGGIASCA OLIVES IN BRINE
