We grow exclusively only white garlic to transform it into black garlic so it is the original and true black garlic, it comes only from white garlic bulbs that have less allicin.

We do not use pesticides and chemicals but the processing phases are all done manually as in the old days, at the end we prepare the famous and beautiful braids to hang.

Black garlic is obtained through a fermentation process of white garlic, without adding additives and preservatives. During this process the garlic bulbs become dark black in color and a natural caramelization effect is created thanks to the formation of melanoidin, an antioxidant par excellence (Maillard reaction).
The segments take on a soft, gelatinous consistency, with a slightly sweet flavour with a salty note and an aftertaste that can recall that of licorice, soy sauce and a scent similar to truffle.
