It is difficult to guarantee organic honey, even though ours is an organic company, as the bees cannot control which fields they will fly into. To stem this problem as much as possible, we have created a perfect habitat for our friends, with water available and periodically planting delicacies for them where they can feed themselves without necessarily moving away from their oasis, far from fields with the use of harmful pesticides both for their health than for the honey they produce. The result is the production of excellent quality honey, pollen and royal jelly.
Our pride, Il Miele in Favo
Honey in honeycomb is the most authentic and natural process chosen by bees to package and preserve honey inside a group of hexagonal wax cells made directly by the bees, hermetically closed by a wax cap. Tasting it, you will discover that it has a different flavour... especially the scent. It's not a casuality. The honey that you buy in jars, during extraction with the centrifuge, comes into contact with the air and disperses part of the aromatic component. This does not happen for honey in the comb, processed only by worker bees, without any manipulation by the beekeeper. Honey in the comb is therefore virgin honey.

The olive oil produced on the Fiora hills is known for its quality which makes it one of the best in Tuscany. The ideal environmental conditions, together with an ancient tradition, constitute the secret of this exemplary product. the harvest begins between the end of October and mid-November, exclusively by hand (manual picking) with the aid of large nets on the ground to contain the falling olives. The olives are placed in wooden and/or food-grade plastic boxes, and are then manually selected in order to eliminate all the leaves and non-compliant olives to continue the process. Within 24 hours of harvesting they are pressed in order to guarantee the integrity of aromas, taste, colors and maintain a very low level of acidity. The process is carried out at an oil mill that uses a continuous, temperature-controlled system.

Maremma is a land of powerful and concentrated wines, the result of grapes that easily reach a perfect level of ripeness, thanks to the good conditions of exposure to sunlight.
The particular nature of the soil, tufaceous and of volcanic origin, is of considerable importance as it is part of the distinctive characteristics of the production area of Bianco di Pitigliano d.o.c.
The La Dolce Vita agricultural company manages 1.5 hectares of historic vineyards using organic farming criteria in which there are Procanico Rosa, Verdello, Malvasia, Ansonica Pitiglianese clone and other native varieties. The quality of the grapes and the limited production per hectare (about 5 quintals) due primarily to the age of the vineyard, together with the manual harvesting in 20 kg boxes with sorting in the vineyard and transport with controlled temperature trucks, have made so that in the last year the company managed to produce 4750 bottles of white wine called Selva Cerrina, a wine that was vinified and processed in the cellars of the famous oenologist Gaspare Buscemi, nicknamed "the wine craftsman". The organic grapes were treated only with sulfur and copper, for a total of 5 treatments and green manures. The direct pressing of the grapes, carried out with a press designed and built by Buscemi himself, allows to obtain and speed up a greater extraction of free-run must. Fermentation occurs spontaneously using only indigenous yeasts. The one-piece cork stopper is always purified using exclusive technology by Buscemi. The sulphite content is extremely low (around 40mg/L), less than 1/3 of that allowed for organic wine. Even though it was not possible to place the leaflet identifying organic production on the label, Selva Cerrina was vinified in all phases of production according to even more rigorous criteria than this system.
Straw yellow colour, bright, enveloping in the structure of the consistency. The aromas on the nose recall light fruity notes of pear and citrus fruits, then moving towards floral and mineral scents. When tasted it is lively, characterized by an excellent acidity and an interesting flavour. Well-balanced polyalcoholic structure, long persistence and intensity.

This is grandmother Teresa's recipe, we grow the aubergines in our organic garden, they are harvested manually, selected, peeled, cut into fillets and put in salt in order to purge the bitterness.
After being boiled with wine and vinegar, we season them with oregano, chilli pepper, garlic and immersed in our organic EVO oil.
The remaining oil, aromatic and high quality, can be used to season bruschetta, salads, hard-boiled eggs or simply be consumed on a slice of fresh bread.
They have a strong and appetizing taste.
