Good morning,
We are a young company that works for the marketing of food
products mainly from Irpinia, an Italian territory still to be tasted. This
territory is located in the hinterland of Campania, surrounded by
greenery, where they still produce in a genuine, authentic and
sustainable way, many food and wine products rediscovered in
recent years, thanks to the commitment of many young farmers,
supported by the association
Slow Food. Slow Food members have been studying, recovering and
enhancing plant species and animal breeds at risk of extinction for years,
supporting local companies to believe in the production of unique
excellence, fruit of wisdom
Passed down from the ancestors and their sustainable processes.
From the love for this
food and wine heritage the idea of creating a society that
work to make known our unique food and wine that evoke flavors
ancient, full of history. Irpinia is a land rich in history and flavors, which
preserves a vastness of unique products of their kind.
These products are not available on a large scale precisely to ensure high
quality. We focus on our excellence: extra virgin olive oil, wines, the
fresh and aged cheeses, fresh pasta, tomato puree, preserves,
jams, vegetables and vegetables, nougat and many others.

extra virgin olive oil

The name is dedicated to this variety that represents a diamond in the Irpinia olive production.
Monovarietal oil of quality and great impact on the palate, the variety is greatly influenced by the mild climate but with exceptional peaks of cold.
Fruity green olive of medium intensity, decidedly herbaceous, with clear fragrances of unripe tomato, artichoke and almond.
The taste highlights medium bitter and persistent spicy tones with an aftertaste of wild herbs.
In the third ten days of October, when the drupes reach about 5-10% of veraison (i.e. the beginning of ripening characterized by the change in color), the harvest is carried out by hand with facilitators that cause the olives to fall onto nets spread out on the ground. Immediately afterwards, the olives are harvested manually, placed in perforated plastic crates and transported to the mill.
Processing
It is carried out within 10 hours of harvesting in the Barbieri - Paternopoli continuous cycle oil mill,
about 10 kilometers from the olive groves. The washed olives
are crushed and the resulting paste is kneaded (average temperature 23°C) and passed through a two-phase decanter.
Storage and packaging
Storage and packaging Radice extra virgin olive oil is filtered, stored in stainless steel tanks (which prevents oxidation) and, if necessary, bottled in dark glass.

White wine

The grapes harvested when fully ripe are quickly transported to the cellar where they are carefully selected, then destemmed, pressed and subjected to fermentation at a controlled temperature. At the end of fermentation they are transferred to stainless steel containers where they evolve for about 10 months on fine lees. Organoleptic Characteristics: Unique wine, it has a straw yellow color with a slight golden hue, the nose is intense and persistent with clear mineral and fruity hints due to the nature of the soil. The taste is dry with great intensity and excellent persistence in the mouth, warm and savoury, it retains a good acid consistency that makes it intense and pleasant on the palate.
