IL SIMPOSIO farm is located about ten kilometers from Nettuno, set on the gentle slopes of the Roman countryside.
It was founded in the 1950s from a family tradition with Franco Nardelli, father of Maria Luisa, the current owner, who has focused the farm's activities on olive cultivation. With her came the estate's current name, inspired by her deep passion for Plato, the ancient Greek philosopher studied in depth during her university years. His dialogue, The Symposium, reflects themes of communication and conviviality, qualities that the agricultural products are meant to evoke.
The farm's commitment is currently dedicated to selected olive varieties: Frantoio, Leccino, Moraiolo, and Coratina. A total of 4,000 trees are planted across 14 hectares of land.
The extra virgin olive oil from IL SIMPOSIO is a high-quality product, born from daily agronomic care in the field and the meticulous attention given to the subsequent processing. This combination of production choices creates a product that prioritizes quality over quantity, valuing oil content and authenticity, aiming to be exclusively evaluated as “extra virgin” for its very low free acidity and its excellent organoleptic qualities.
The delicate harvesting phase is meticulously carried out by hand-picking, complemented by mechanical means, with the olives placed in special ventilated bins for daily transport to the mill.
The high-tech olive processing equipment at the mill ensures a continuous and integrated process, always below 26 degrees Celsius: the so-called cold pressing method. Every stage is supervised by the owner, underscoring the added value that human dedication brings to achieving a high-quality product.
The storage phase is equally delicate and important; the oil is preserved in stainless steel silos with nitrogen.
The farm produces three varieties of extra virgin olive oil: the SIMPOSIO, a blend of frantoio and leccino, medium fruity, the MORAIOLO, monocultivar moraiolo and the CORATINA, monocultivar coratina, the latter is characteristic for its high polyphenolic content, to be highly valued as health food.
Il Simposio extra virgin olive oil is available in elegant 0.5-liter bottles, convenient 1-liter cans, and 5-liter “bag-in-box” options, available both directly from the farm and at specialized retail points.

SIMPOSIO : Lightly fruity oil with pronounced aromas of freshly
cut grass, thistle, and bay leaf. On the palate, it stands
out for its character and style, confirming aromatic
generosity, harmony, and fragrance.
Blend: Frantoio 60%, Leccino 40%.
MORAIOLO : Medium fruity extra virgin olive oil with notes of
wild herbs and vanilla. On the palate, hints of
sweet almond and medicinal herbs emerge, with a
delicate balance of bitterness and spiciness that
lingers on the finish.
Monocultivar Moraiolo.
CORATINA : Intensely fruity extra virgin olive oil. In addition to
being an excellent condiment, it is considered a true
antioxidant due to its high polyphenol content.
This oil is recognized as an outstanding dietary supplement,
earning the epithet food-health.
