The Emilia Romagna region owes its culinary richness to the unique characteristics of its landscape. Its combination of low altitudes and fertile soils in the Po River Valley with the more rugged terrain of the stunning Apennines mountain range fosters an astounding variety of gastronomic experiences.
Emilia-Romagna indeed boasts 200 traditional products and 26 ingredients enjoying geographical protection recognition under European regulations. Unsurprisingly, this region is hailed as the very heart of Italy's culinary excellence.
Confartigianato plays a pivotal role in uniting and promoting the talented artisans and farms who produce and sell a wide range of ingredients and prepared food items. Montreal - 10:00am EST - 12:00pm EST

On Monday, November 13, at ITHQ Montreal, indulge in the experience of "Artigianato a Tavola," a showcase highlighting the evolution from humble dishes to delicacies within Calabria cuisine. This event features a masterclass led by Chef Caterina Ceraudo and Chef Pasquale Vari and is proudly presented by the ITA Montreal office in partnership with Confartigianato.

Situated at the southernmost point of the Italian peninsula, Calabria stretches between the Ionian and Tyrrhenian seas, characterized by narrow beaches swiftly ascending into mountainous landscapes. The rugged terrain naturally fostered pockets of isolated societies, many of which continue to reflect Calabria's historical significance as part of Magna Graecia. Notably, several mountain villages still maintain a dialect derived from ancient Greek.

This unique blend of cultural and geographical heritage has given rise to a cuisine that honors locally abundant, boldly flavored ingredients. While the cuisine remains rooted in simplicity and authenticity, renowned Michelin Star Master Chefs like Caterina Ceraudo have reimagined it into dishes of exceptional delicacy and originality. This transformation has been made possible by agrifood businesses in the region that continue to uphold the art of culinary craftsmanship at the dining table, as showcased on https://confart.digital.ice.it/it.

Vancouver - 10:30am PST - 12:30pm PST

Indulge in a captivating culinary experience on Thursday, November 16, at Vancouver Community College for "Artigianato a Tavola," a celebration of Emilia Cuisine brought to life in the heart of Vancouver. This special event showcases a fascinating masterclass led by Chef Mark Massicotte and David Azzi, presented by the ITA Toronto office in collaboration with Confartigianato.

Emilia is a sub-region of Emilia-Romagna, in Northern Italy, which is known for its rich culinary tradition and is home to many famous dishes, including tortellini, often filled with a pork laden mix, as in the region’s tradition. The region is also known for its Parmigiano-Reggiano and Grana Padano cheese, balsamic vinegar, and prosciutto di Parma. Emilia has a considerable gastronomic history, deriving from almost eight centuries of autonomy of its cities, from the age of the municipalities to the unification of Italy. Some were capital cities of the surrounding territory and large noble families had celebrated and famous cooks prepared fanciful and innovative creations which made history in the area.. Emilian cuisine is undoubtedly abundant and tasty and is synonymous with excellent cuisine all over the world.
