We dedicate our lives to cultivating the olive tree, a strong and earthly plant, and continue to pave the road with new concepts and innovations.
The olive groves are the heart and soul of the farm. All of the “Coratina” trees are the result of passion instilled in the ancient and precious cultivation that has been preserved from a distant passage of time, a passion that continues to the present day. The groves are the fertile womb of the “liquid gold of Puglia”: extra virgin olive oil.Each phase, from pruning the plants, the organic fertilization and drip irrigation techniques, through to the eventual olive harvest (carried out between the last ten days of November and the beginning of December), is carried out in compliance with the natural cycles and characteristics of the soil. This process guarantees that the plants are always healthy and rooted in fertile soil thanks to the superficial and minimal land work and the light trimming of the trees.
The organic extra virgin olive oil of Il Quadrato delle Rose is the precious juice of the "Coratina" cultivar olives, collected when reaching 40-50% of the ripening phase, when the colour changes from green to purple, providing the maximum amount of fruity vegetable aromas. This is the result of a cultivation respectful of nature in which ethical choices are well combined with the needs of the land and the discipline of organic agriculture.
Extracted within 12 hours of delivery to the oil mill, using a line dedicated to organic production.
Every single drop contains the organoleptic characteristics and the nutritional properties typical of the extra virgin olive oil of the "Coratina" cultivar known and appreciated all over the world.

The organic extra virgin olive oil from the Cru selection is cold extracted from the best "Coratina" cultivar olives from our olive grove. A selection made in the field at the beginning of the harvest, when the veraison is in its infancy and the olives present themselves in all their perfection. We obtain a superior quality product from these fruits whose phenol content and organoleptic properties are at their optimum.

To promote and maintain the excellence of this product, the distinguishable black case, which in addition to giving the product a distinguishable note of style, protects the oil from inadvertent exposure to sunlight.

Our premium quality monovarietal extra virgin olive oil is coupled with our exclusive packaging with distinguishable design, both elements together form the synthesis of the values of Il Quadrato delle Rose, Our values represent the protection of biodiversity and the commitment to environmental sustainability. The packaging is made of honeycomb cardboard, a reusable and recyclable material, which is aligned with the green vision of our farm, that since its foundation operates in respect of the land and its necessities.

Freshly squeezed with a colour tending towards green, our organic extra virgin "Coratina" oil over time reaches an unmistakable golden hue enhanced by its particular density.

A precious nectar, with evident hints of artichoke, tomato, field grass on the nose and taste, a pleasant undertone of toasted hazelnut is appreciated through a delicate note.

On the palate, however, its typical bitter and fruity green taste with hints of tomato flows into a spicy finish, characteristics synonymous with the high concentration of polyphenols.

Its unripe fruity flavour enhances any type of dish, arousing immense flavour sensations.
